Yama Lama Ding Dong (Sweet Potato magic) OG 1.052 10 lbs Pilsner malt 3 lbs Munich malt .5 lbs Crystal 40L 8 lbs yams, roasted, deskinned, mashed, and heated 3/4 cup blackstrap molasses (added to boil) 3/4 oz EKG 5% (60 mins) 1/2 oz Fuggles 4% (30 mins) 2 tsp ground cinnamon (in the small jar, not fresh stick cinnamon) 1 tsp Irish moss 1 tsp yeast nutrient Pitch on yeast from the red rye, which was racked the night before TODO: next time, put yams in mash water Brewed on 8/19/06 Baking of yams - put on two cookie sheets in a 400 degree oven - I checked it often and pulled open the skin of one, they should probably cook for 1 hr 15 mins to 1 hr 30 mins - skinned and mashed up - covered and refrigerated overnight - next day, reheated in a pot on the stove, although next time, I'd put them in the mash water!!!! DO THIS NEXT TIME Mash - mashed in a VERY cool, so took a 1 gallon decoction and brought it to a boil on the stove. This raised the mash temp to 148 or so. - Runoff was absolutely impossible, so after many attempts, I actually poured the mash through my huge strainer. This was a pretty shitty idea, but it worked okay, I guess. The yield from the yams was fairly respectible for the way I abused the lautering process. Boil an hour, and proceed as usual otherwise. There was a surprising amount of trub, which I guess is why runoff really, really sucked. Racked 9/1/06 - SG 1.008. Way low! - Tasted it, and the *flavor* is very nice, but it's a bit chalky. - After racking, lots more sediment started to fall out shortly after racking. May still need to use some isinglass when kegging. Kegged 9/21/06 - SG 1.008. Hasn't really moved - it's dropped clear, due to the three weekd os secondary. Maybe this was a bit too long - brilliant orange color - tastes pretty good, except there's a bit of burntness to it. this may be due to stupid things I've done to it. I kinda want to try this beer again. Maybe next year. Bottled 10/18/06 - Bottled 8 bottles off the keg, which has been sitting in my 68F room for nearly a month - again, very good
